Ingredients (for 1 portion)

  • Cod fillet (wash out the salt)
  • Onion
  • Garlic
  • Tomato
  • Tomato paste
  • Sundried tomato
  • Balsamiko vinegar
  • Black Raisin of Messinia
  • Bay leaves
  • Extra virgin olive oil of Messinia
  • Parsley
  • Salt
  • Pepper


In a frying pan, add the olive oil, the onion (cut in rings) and the garlic and saute until they soften up.

Grate the tomato and add it, along with the paste, in the frying pan. Put inside the raisins, mix them well and cook for some more time.

Take a deep pot and put in the bottom the tomatoes in slices. Lay the fish on them.

Add the bay leaves, flavour with salt and pepper and if necessary add some warm water until the sauce almost covers the fish.

Cook over low heat until the sauce thickens well and brings the oil to the surface.

The food is served warm.
