Pork fricassee with wild greens from Taygetos

  • Wild greens
  • Οnion, chopped
  • Scallion
  • Dill
  • Fresh lemon juice
  • Corn flour
  • Salt
  • Pepper
  • Extra Virgin Olive Oil PDO Kalamata


Chop the onion and the scallion and then saute them with a little olive oil in a pot. Wash and cut the meat into portions, then place it along with the onions and saute them all together. Add the chopped dill and mix them all together, then pour water to cover the meat, cover with lid and let it simmer.

Then, when you have cleaned and washed the greens thoroughly, put them in a pot with boiling water, to boil for 10 minutes or so.

Strain the greens and -half an hour before the pork is done- put them in the same pot, so they can get cooked all together, flavoring with theappropriate spices. Add the lemon juice after having diluted the cornflour.

Shake well to spread everywhere and then return it to the heat to get 2-3 boils to thicken. Finally add the chopped dill.
