  • Glutinous rice
  • Sugar
  • Fresh milk 3.5% fat
  • Sour cream 35%
  • Vanilla natural
  • Fresh spearmint
  • Passion fruits
  • Cinnamon powder
  • Lemon peel


In a pot, add glutinous rice, milk and cream. Add to the food processor sugar and seeds of vanilla pod. Mix them for 1 minute in the blender to dissolve the vanilla seeds.Add 2 cinnamon sticks and the lemon peel to the pot with the milk. Cook over medium heat and bring to a boil. Pour the rice and reduce heat, simmer for 20-25 minutes, stirring constantly. It is important to stir constantly in order to prevent sticking to the bottom of the pot. As soon as the mixture boils, reduce heat to medium-low.

The more you mix the sooner it gets thicker. Once the rice starts to thicken, let the pot aside, put a lid and leave to rest for 5 minutes. Pour the whole mixture into a colander to strain the rice from the cream. Once the rice has cooled, mold it to form small balls. Decorate your dish with the rice pudding cream, the rice balls, the passion fruit sauce and sprinkle with cinnamon.
