KALAMATA KAYANAS


Kalamata Kayanas with salted pork

Ingredients

  • Medium tomatoes grated
  • Eggs
  • Salted pork cut into small pieces
  • Extra virgin olive oil PDO Kalamata
  • Pepper
  • Fresh oregano
  • Fresh parsley
  • Sfela cheese

Directions

Add the grated tomatoes into a deep pan and let them boil for a while.

Add the salted pork, a little olive oil and pepper. Braise the sauce until it thickens and add sfela.

Once it boils, add the whisked eggs, stir gently and add the oregano.

Cook for about 10 minutes and when the mixture thickens, remove from heat and serve with extra pepper and fresh chopped parsley.
