INGREDIENTS
- 2 cups flour for all uses
- 1 ½ cup water
- 1 pinch of salt
- Some drops of lemon juice
- PDO Kalamata olive oil for frying
- Honey for garnish
- Cinnamon
- Walnuts
INGREDIENTS
In a bowl put the flour and salt, and add slowly some water (with constant flow), gently stirring with your hand.
Once you are done with water, the mixture should look like a porridge, and flow nicely off the spoon.
Cover the mixture with a clean towel and keep it at room temperature (or somewhere warm) for about 1 hour to swell.
In a large, deep frying pan heat some olive oil. Once it gets hot, use a tablespoon to hand small portions of porridge and dip them into olive oil. Fry them for about 1-2 minutes, until golden.
Pull them out with a slotted spoon and place them on a plate with paper towels.
Just before serving, sprinkle with sugar and cinnamon, or alternatively with honey (instead of sugar).
